Adjacent to the pastouška is the Crudum Coffee roasting plant, which can also provide you with an "alternative coffee course"or a lecture on the coffee world by appointment.

It's not just about roasting

The final taste of coffee is a composite of three key aspects. The first is its origin - the way the coffee cherries are grown, harvested and processed. The second factor is the roast itself, its freshness and the way the profile is managed, which influences, for example, the acidity or bitterness of the resulting beverage and determines what flavour potential a particular bean will offer. The third aspect is the preparation of the coffee itself, which depends on the end user.

Tomas and Petr from Crudum Coffee are well aware that coffee can be damaged at each of these stages. That's why they put emphasis on the quality that they can influence - i.e. the choice of raw materials and the roasting process itself. For each coffee, they look for an individual roasting profile that brings out its unique character and allows the natural flavour nuances to develop. They are constantly tasting, comparing and fine-tuning the coffee. Before it reaches customers, it goes through sampling in a small circle of family and friends. Only when everything really clicks do they send the coffee out into the world.

Rooted in nature and the desire for freedom

Tomáš and Petr draw inspiration from tramp culture, local forests and the unspoiled nature of western Bohemia. Their roasting takes place several times a week to ensure that the coffee reaches their customers as fresh as possible. They offer a selection of filter coffees (roasted lighter) as well as precisely crafted espresso blends.

They use a modern fluid roaster to roast the beans, which allows them greater control over the process and better preservation of the flavour profile of the individual beans. They don't deliberately over-roast their coffees - they don't look for a uniform bitterness, but instead let the natural diversity of flavours shine through.

The pursuit of ideals

Coffee is their passion - and they know that freshness is one of the most important factors for a truly exceptional cup. The flavour of coffee changes fundamentally within just a few days after brewing - after about a month, you can no longer expect the full aromatic and flavour potential. The gases released when roasting the beans continue to work and slowly escape through the pressure relief valve of the packaging. However, this development is limited in time.

That's why Crudum Coffee focuses on local distribution - they want the coffee to reach the end customer at the ideal time. Another key priority is the origin of the coffee. They work with suppliers who share their values: fresh harvest selection, fair prices for farmers, certified organic quality.
